I'm building a trackday E30 coupe and want to upgrade the brakes (without breaking the bank!) anybody done this or know the best low'ish cost solution?

My only advice would be fairly generic & that would be to find the exact dimensions of the discs & also if any higher spec model has the same disc 'bell' measurements but with greater diameter discs & then find out if that models calipers will fit, or can be adapted to fit, and then fit track day pads from someone like Pagid.

A similar mod is well documented for the e36, you fit the discs & calipers from an e46 (325 IIRC) for much greater stopping power.

I used Wilwood Dynalite and Hawk pads on my old 325. I'd stripped as much weight as I could from it, so was pretty might and the brakes were very effective. WMS also do an off the shelf kit to suit the e30.

That said, the stock brakes can work pretty well with just a change of pads. The Production racers just use Mintex I believe so start by making sure the OE set-up is as good as can be.

Stock brakes are all you need really, but with Green Stuff pads and braided hoses which improves feel etc - no need for a disc size upgrade or hub swap

Personally I wouldn't touch anything made by EBC with a bargepole!

Mintex 1144/1155 are good, Pagid RS29 are better still.

I use my 320 in PBMW,

I've used Pagid RS29 and Performance friction pads both were good, also being recommended Mintex F2's at the moment.

I use them with the standard discs from Euro car parts, Braided hoses and uprated gulf brake fluid.
