The BMW part number is 41 31 8 185 764 for sun roof, 41 31 8 204 880 for no sun roof. Ring up a dealer and see what the list price is, then see how much you can get off. I'd think on those parts you'd be looking at 20%+, maybe even 30%, and sometimes they are not as much as you'd expect. You could also try BMMiniParts, they will give a reasonable discount (17.5% usually) but a dealer will be able to better it.
Probably quite a difficult item to remove from a car at a scrapyard and not damage so much in the process that it's not really usable.

Realoem quote $1105 for the roof skin with the sunroof aperture, and $964 for the roof skin without a sunroof aperture ( http://www.realoem.com/bmw/showparts.do?model=DN63... ).
As a general rule of thumb, if you change the $ sign for a £ sign then that's somewhere around what you will pay at BMW.
(NOTE: Before anyone posts that it's not always totally accurate, no it's not but it gives a decent idea of the cost of parts in £'s).
Removing the old roof skin and fitting a new roof skin + painting it is going to be a very labour intensive process and if you can't do it yourself, the end cost will probably be at least three the cost of the part.
