Trip to Millau - must sees/dos en route?

Just past Issoire on the A75 you can get off the autoroute and head up to this place for lunch. http://www.barstthomas.fr/Qui-sommes-nous.html
Some beautiful roads in the area, amazing views of Usson and the Puy de dôme.
Great food and a friendly atmosphere. They may even have rooms available to stay by now, I know they were renovating last time I was there.
Ample safe parking for bikes and ask John about his Citroen traction-avant. I know they get pretty busy in august, so might be worth a phone call if you're a big group for food.

+1 for Oradour-Sur-Glane,
Also, ride the Gorge Du Tarn - here's the detour that I did when not the way to spain, the route brings you back out onto the motorway so you can get off at the service area for the millau bridge viewing point. The gorge is spectacular and never ending smooth roads and bends.
