My father managed to forget a key in the ignition when we were in Prague last year
and his bike hasn't been stolen over a period of four hours. It was his Honda CX500, so ugly that nobody took it for a joyride.
He often tells a story of him going to Poland in his Renault 21 in the 90ies leaving the key in the lock overnight. He was wondering why nobody nicked it, so a relative enlightened him stating that nobody would steal a Renault as parts were difficult to find.

I think it's just luck.
His BMW is still a desirable bike to steal and break for parts, or ship abroad - although your ST probably more so - and I'm sure a very large percentage of bike theft is for this purpose rather than exclusively joy riding.
He's a fool to think it's safe in London completely unsecured. IMHO, it's only a matter of time.
