I take my pads out and measure them with a micrometer every Friday.

I keep the results in an excel spreadsheet, recorded with the mileage, average speed, and average ambient air temperature of the hours i've been riding. With this data I then (on the 3rd friday of every month) produce graphs of brake pad wear against mileage done, temperature, and average speed.
