Much more fun that buying something unreliable that sits waiting for parts.

Hyosung 125's are pretty good for the money if you can find them. A pal of mine had one and it was solid while looking like a bigger bike.

I wouldn't dwell too long on thoughts of being seen on a 125. More than anything, I'd rather not be seen on a 125 sportsbike. Skinny tyre and tiny exhaust aside, other road users will expect you to be fast and a four stroke 125 is anything but. I'd either urge you just to do your DAS or spend your limited budget on something less sporty and Japanese. £1000 won't get much Aprilia as they can be derestircted to make 33bhp so are actually pretty quick. The lower end of the price range is pretty rough. Learn your basics on a reliable little runner and then sling it for a proper bike once you've got a licence.
The YZF-125 isn't all that impressive, either. A mate of mine had one before a coccyx problem forced him to give up biking. The fit and finish was impressive for a 125 and it did feel a little more premium than the usual 125 bikes but otherwise it bore all the hallmarks of it's class: crap brakes, cheap and bouncy suspension, rough engine and very little power beyond a semi-useful spurt to 40mph.

id just like to say, you can pick up brand new lexmoto bikes and scooters very cheap. but ! to be honest, they fall apart, we bought my son a lexmoto 125 fmx scooter, that was 6 months ago brand new from the shop. nuts and bolts have fallen out of it, the side stand is a joke, if you use it, and some one just brushed past it, it will fall of the stand. the main stand has snapped, so have a new one on order, the seat catch has broken, ect,cet, its worth paying that bit extra for a well known name bike. im a biker myself, and i should have known better than to buy a cheap bike for him.

Honda CBR 250R's are nice looking bikes and have been around for a while so should be cheap ones kicking about.

I felt exactly the same when I only had my CBT and then again when I had my A2. If I could do it again I'd buy a Varadero and suck it up until I could do DAS.
