I followed a bloke doing an enduro wheelie for about 250 meters today. This was in the Lincs sticks though and there was no pram in sight. Sorry.

You won't win. The court will allow the witness to alter their state,met due a clerical error and the rest is true and evidenced on the video. You will just end up with a much harsher penalty.

I don't doubt you are correct and have no knowledge of how it works but think this makes little sense. I assuming when submitting a video you have to declare that it is original just as you have to declare you are telling the truth in a witness statement.
How can someone who embellishes their story be trusted to submit unedited footage?

They aren't embellishing it. They have made a clerical error and included part of a different offence. They will be allowed to retract that in court if challenged over it. It certainly will not be a valid defence.
