Same here - I thought the whole cow was used up, with the primary consideration being food for us... I know there are breeds of cow with better steaks etc. and presumably there are breeds of cow with better hides, but I always thought leather was a by-product, not a primary reason for killing the cows.

Presumably this only applies to top-grade leather, with 'normal' leather coming from beef cows?

Spoke to a farmer years ago who told me he had a 'leather herd' & that different breeds were used for meat. That's all I know (about cow farming)!
