Replacing the servo is both expensive and a non-fun event.
So first confirm the servo is at fault.
Sit in car and pump the brakes several times with the engine off (this releases any remaining vacuum).
Apply a medium pressure on the brake pedal and hold it there as you start the engine. If the servo is working you will feel the pedal move down a little as the engine starts.

Lucky for me the servo is fine. I did some research and could find a ford fiesta unit much cheaper than the units with the famous TVR tax.
The brake pedal is just extremely firm and very little travel. I also have braided hoses all round so I'll just change the fluid out for now as it has not been done for a few years now.
