Are there different exhaust manifold gaskets to suit different head porting, or do you trim it to suit?

John Eales said it looked like some porting work had been done to my head (good work by the way)and its not a std 500. I would hate for it to be fitted with a gasket with a small aperture. Although would it matter, because if its got the standard manifold ( I believe it has) it wouldnt matter if the gasket matched that as that size is what limits flow.
