These worked by accident for me.Forgot to take em off after tinkering with my bro in laws Defender in Feb. Kept a pair in the car since. light, cheap, good feel , surprisingly warm.

A touch on the expensive side but these would be what i'd go for. They'll be nice and warm as they're Merino wool, but also have the grippy palms.

I find a trilby or Panama is fine when driving the Volvo roof down, but with the TVR it is stowed safely in the boot and a flat cap is choice on cooler days.

But there is nothing like a proper coat in winter.

Good in the Chimaera, but vital in the Caterham as there's not much of a heater and a lot of wind! I can't really drive it without them in the winter.

They're not too thick but they're warm enough. And they have a rubber grip, so grip on the wheel isn't compromised. They also have touch screen fingertips, meaning you can still operate a sat nav or a phone with them on.

I wear neoprene backed horse riding gloves in the colder times when the roof is down.
They are relatively cheep and designed to grip leather (reins) in mixed conditions so work well with most steering wheels.
