Another update.
After taking the top wishbones off and swapping them over the problem was still there, I then spread the camber adjuster end of the wishbone by over 5mm then it all went back together easily, the only thing now is I can't torque that joint up as it distorts the wishbone, it looks like it needs something solid between the insides of the camber slots and the upright.
Is there any reason why I can't use some thick stainless washers next to the very thin black nylon thrust washers?

What kind of work was done on your chassis? Structural welding wise.

Yes that is what you need to do. It has to be a metal spacer / washer against the inside of the wishbone otherwise the joint will keep slipping and you will loose your correct camber.

Just make sure your metal washer inner diameter is the same as the bush metal tube inner diameter so that the metal washer cant slip over it. Basically the bush metal tube will trap the metal washer against the wishbone if you see what i mean.
