If it's immaculate, with great history and nothing needs doing, it's perhaps not a completely mad price - £2k tops perhaps. The combination of Quattro, estate body and that engine is relatively rare, and the "survive the snow this winter" mind-set adds a few quid at this time of year.
But if, like most, it's a saloon with rusty arches, a patchy history and is due a cambelt change, then to my mind it's an £800 car.

Had one of those, brilliant car, only traded it in at 132k miles because oil starvation knackered the engine due to pickup getting blocked which is a known fault. Car has fash and they never picked the problem up until too late.
I am not surprised at the price as quite rare, only 700 brought into the country and not many for sale. If it is immaculate then probably not too OTT but buy on condition.

I paid just under £2000 for mine at 120k a year ago today as it happens.
Mine was one owner from new and was in great condition for the miles.
One thing to check are the suspension bushes as when they start to go the car can feel quite wallowy. But if everything has been looked after £2.5k ain't too bad. £2k would be a tad more like it though.

Found out it has zero history.Looked good in the pics but suffice to say I didnt bother going to see it.Mine was one owner from new and was in great condition for the miles.

I dont wish to be argumentative but Im not sure I agree with you.Its a relatively complex 4wd turbocharged estate with no service history and as pointed out above with a top dollar price tag.Sellers' market.
