What wheels can I use as winters for 'my' and golf R? Would it just be any 18" 5x112? Would it be possible to drop down to 17s or 16s for comfort?
I'm not sure if it's worth it yet, but wanted to get some opinions.

Just any 17s? I know I need to clear the brakes at the front, which is my main concern.

Why not put winter tyres on your existing rims? They work well in that size. No need to go smaller.

The official VW winter wheels are 18" but you can fit 17 apparently ( some pics here) What wheels have you got already? As mentioned above why not just get winter tyres for what you have? I had some Avon 225/40r18 on my R32 and they were great when it got cold and slippy.

On my Golf Mk7 GT I bought a set of steelies from Mr. Winter Wheels for not much (£40 a wheel? Something like that) and it is so much more convenient than faffing around with putting tyres on and off existing rims, especially if we get a warm snap and I want to swap back temporarily.
