tyre choice is free so you can run A or B list.

I run B list R888's to get enough grip in a straight line in low gears. You are right about the cold tyre bit - that is a major challenge when sprinting.

Perhaps a bigger problem though is on longer really fast circuits like Goodwood because we have to push so hard we often overheat the B list tyres in 2 laps and they suddenly lose all their grip which is a bit of a nightmare. How do you race guys avoid overheating B list tyres?

I've run the Rover engine'd Tuscan in CSCC events (Oulton ,Anglesey etc) on Dunlop Direzza DG02 - Hard Compound.
They're dicey for a couple of laps and then settle down to being just about OK - squeal a lot in corners like a 73 Chevy Impala hehe which is a tad disconcerting..
Upside being - they never overheat even in Classics 40 min races.
Never used 1B on AJP8 Tuscan - i expect the hard compound Direzza's would be overwhelmed - i think the chaps that race AJP8 Challenge cars on 1B use Toyo R888.
