Do they break down the customers that have been sold to, into male and female for example?
There is some research suggesting that sales staff are better/worse at selling to some groups than others and I am trying to get at why that might be and try to smooth it out a bit.

What sort of business are you looking at?
McDonalds keep no records, big organisations selling B2B will keep lots of records, but are not really relevant to the male/female type of split. Some companies keep sales metrics based on gender/age/geography, many do not.

I am interested in sectors where the staff have some real influence over whether or not a sale is made and where they can nail data showing who has sold to who. I had thought motor retail but I am told negotiations over price these days tend to be less the sales person's domain and more the sales manager.
