If I wanted to laser cut into a grapefruit sized alloy/stainless sphere made up from two interlocking semi spheres, are there machines with robotic heads which could do this?

yes you need a 5 axis laser system to do this

Assuming you mean hollow spheres, you're going to need several processes before you get to the point of cutting it up; typically things like this are made from pressed or spun sheet metal hemispheres welded together.
