Something, probably Chrome, is hogging memory in a way that it didn't used to.

Have you a plan in place to keep a back-up of your photos on another external drive?
Assuming so, and you simply want to move them off the MBP to free up more space, and you’ve the server mounted on the desktop, then it should require nothing more than grabbing the folder(s) and holding down the Command key as you drag the folder into the new location on the Mini. You should see the + symbol disappear, which means you’re moving rather than copying.
If you have those photos already imported into iPhoto, for example, then when you double click on each one (as if to edit) then you should get a pop-up saying the original can’t be found, and offering the options of Cancel or Find it, which will let you point to the file in its new location.

Thanks for the explanation, that helps but is there any way I can get this done automatically i.e. download photos to the MBP, they get automatically copied to the MacMini and then as needed I delete from the MBP to make space?

If you’re referring to pulling images from online, then simply open Safari’s Preferences, and point to the folder on the server where you want them to be stored.
When the server isn’t mounted, then it’ll probably revert to the default Downloads folder, so you’d need to drag and drop once it’s connected.

I have a slightly similar issue. I have two networks at home. One for family (that gives access to shared drives) and one for guests (internet only).
For some reason, the MBP doesn't like the guest network. It will work on it intermittently but the internet connection is often either slow or non-existent. It is fine on the main network. When I awaken the MBP, it always links to the guest network. I have to select the main one manually.
I could forget the guest one but there are parts of the house where the guest network gives a stronger signal.
Annoying but not the end of the world.

I’m not sure what you thought OS Server was going to do or offer a single user, but if nothing else, at least it’ll act as a repository for your photos, music, videos, etc, etc.
Maybe over time, you’ll find a use that makes it worth having gone ahead with.
My time with Server, back in the XServe days, was limited – so I can't offer any sage words about how it’ll transform your daily life.
To that end, you could maybe contact a local Apple Store and see if they run any workshops OS Server, as well persevere with Google to find some sites which may spark an idea or reveal a usage that would suit you to a Tee.
One thing that may prove worthwhile, is being able to use it as your storage of photos you share on forums – watches, photography, etc – rather than 3rd party image hosting sites.

After my 10 year old iMac died I bought a new 27" model, all good apart from one thing.
When hovering the cursor over an embedded URL with the Magic Trackpad 2 or the supplied Magic Mouse in an email or in a Safari page the full URL used to be displayed at the bottom of the screen so that I could see that it wasn't sending me anywhere dodgy.
I've wasted ages going through all the Preferences options and searches on Apple Support and can't find out how to turn this feature back on.
Anyone know how to do it?

Actually bin my last post, a search for Status Bar in Safari Help dragged that one up, don't know why it didn't show up in a Spotlight search query, and didn't see it anywhere in the preferences.Do you know where I can either get this from or turn the default Safari Status bar back on?
