Off to Vegas for a few days and have up until now been contemplating getting the OH a 5c for her Christmas as her old 4S is gubbed.

Any reason why I shouldn't buy a 5s/6 16gb over there?

Failing that, why dont Apple sell a 16gb 5c? Looks like they did once upon a time as I see them popping up.

If it is within your gift to get a 6 I would. Better screen size is not as bad as you would imagine and quicker than old gen iPhones

Another consideration is no international warranty on iPhones.

It has come up on here before worth a search as there was a lot of useful info, but basically there are 2 phone networks in the US one will work in the UK one won't. So pick accordingly.

Just go to an Apple store and ask for an unlocked phone with no contract. There is some stupid law that only phone manufacturers can sell unlocked phones, so if you go to Best Buy or somewhere like that they will sell you a contracted phone to a network (I lost my personal phone to thought it was a good time to upgrade to a new Samsung, but no one would sell me 'just an unlocked phone', PITA. Got my phone back in the end at least).

I am over in the US every month, and guys from the UK office have bought loads of 5s/5c for themselves/family (from an Apple Store) and there is no issue with them working here.

Be careful LTE bands. USA has different bands allocated and a model that supports them probably won't work in Europe.

Apple website for details
