You don't, unlike iOS you don't have to have all your app icons on your home screens, just the ones you use most of the time. I only have 4 icons on my home screen though, two of those are folders.
I have done the same. Created folders and dropped all of them in to tidy it up. I can see the logic it just took me a while to adjust. Nova launcher here.
I was perfectly happy with Google now until one day they decided on a whim to switch the app drawer from a horizontal pager to a vertical scroller with the latest update. No options to switch back to your preferred way of working, like it or lump it.
Google, this is my device, please don't just impose your hipster driven whims on my day to day UI experience.

I didn't really like the persistent search bar across the top. I don't mind having one on one home page, but I don't want it on all of them. Also didn't like that it was basically listening out for "OK Google" all the time. Go Launcher full version for me.
It has loads of custom options, and loads of Go Widgets too.
I have had it for about 4 years now, maybe more. I have checked others out, but I go back to Go every time.
I can't be the only one using it, surely, but nobody else has mentioned it as of yet.

I have used Nova launcher since the early days, does everything I need. If you pay for the pro version you can customise the actions tied to gestures on the home screen so mimic the left swipe on the Google Now Launcher and a whole lot more.
Nova is good. I'm a long time user, and even bought the prime version. You can't go wrong.
Saying that, if you want to try something a bit different, give smart launcher a look. Its pretty, fast and lightweight, and I really like it's auto categorisation features and app searching tool. A pretty underrated launcher for me, but very different from your typical android launcher.
