I recently got my old Kindle 3 working again with a new battery and a software update, but I had forgotten what a clunky old thing it is to use.

Can anyone recommend an e-ink reader please that can manage books through a Windows PC that will let me drag and drop into folders?

So for example, I could have a folder called "Sci-Fi", within that folder could be another folder called say "Star Wars", within that folder would be sub-folders for each series of books.

I've been using Calibre to manage the Kindle, but even with the Collections plug-in, it's just a huge faff and I can't split the Collections into Sub-Collections for different series.

I've had 3 kindles and I remember them allowing it?

Anyway, got a Kobo reader now (both the bigger and smaller one) and I'm very impressed, does what you ask as well (plug in and recognizes it as a USB drive).

I always use Calibre though, as it converts all you need.

I can make folders on the Kindle through Windows, but when browsing on the Kindle, it does not show the folder structure, just all the books in a big list, apart from the ones which I have organised into Collections.

I'll have a look at Kobo, thanks.

My Kindle is an old one, like this:
