Oh Well, Another day another question

After being bored to death with Xbox CS Bollo*ks I have decided to just return it to the shop for a simple swap.

My question however. Is there a way to store Saves/Forza Cars from my HD onto something external until I get the new one, Then I can load the saves back up?

Keep the HDD part - unless you're talking about swapping up to an Elite - in which case, either buy a memory card or if you've a Live! account, your info will be automatically retained as part of your profile.
You'll lose any videos and arcade games downloaded though - but no big deal if they were free ones.

Ah-ha, So if I reconnect the Live! acount to the new console my saves will still be in tact?

No, Live only stores your gamer profile stuff and points. Saves are NOT stored on Live, they are on your HDD. Forza saves are in the region of 30-100Mb iirc.
