Just sold something on ebay to a guy in Holland and I told him I'd prefer to send using a signd for service - response is

"Als je je betaling (bijvoorbeeld per cheque) per post stuurt, moet je een kopie van deze e-mail bijvoegen en alles naar het volgende adres sturen. eBay staat verkopers niet toe om contante betalingen te accepteren die per post zijn gestuurd."

Any help please - I suspect something not too polite!!

Google translate does, albeit not fluently I suspect.

" If you pay (for example, by check) by mail send you a copy of this e-mail and attach everything to the following address. eBay does not allow sellers to accept cash payments by mail sent. " .

Well now you mention it, there's one snag in it - you need to substitute 'send' for 'attach' and vice versa.

That is, OP is being ask to attach a copy of the email with the cheque, and send the whole lot to 'the following address'.
