Which Engine Model Next?

For my first fathers day yesterday my 7 month old bought me one of these:
(He's a clever little chap).
Now i wanted one of these as i don't really understand the very basics of engines but wanted to & saw it as a starting point.
Anyhow, i completed it in about an hour & a half (go me - even though it is for ages 10+).
What could i progress onto from here engine build wise?
I don't want anything full size yet & wandered if this subsection of the forum might be able to point me in the direction of something a step or 2 up?

The V8 just looks like something slightly bigger than the Haynes one i just built.Is there anything in metal that's available & possibly something slightly more complex?

What sort of budget are you looking at? I know a couple of people who have built a TVR1A twin cylinder, reversing steam engine (works absolutely fine on compressed air). It needs an amount of fettling, but you only need hand tools and most of it is just finishing the metal parts.
