What is a mint set of PCCB disks and Pads worth for a 996 gt3?

Hard to say, it's hard to trust early PCCB systems.

There is a set on here for 1500 i think.
Too be honest i think from a second hand perspective they will be around a while.
Whatever the cost when new i would look at 1200-1300 for a set max
