When I'm trying to brown the fat on two or more steaks or chops and still want to carry on prepping other stuff I use these
Place all the meat side by side with the fat on the bottom (as if the meat hadn't been cut into steak) then clamp the tongs on either side sliding the metal hoop up the arms to secure them in place.
Hey presto brown away no handed.

Steamed sea bass fillet, panzanella and herbs salad
With a calvados as a digestif
wine was kolbenhof gewürztraminer which was lovely.
