Couple of ways, depending on time and how much mess I'm prepared to clean up!

1) Easy mode (nothing to wash, some foil to throw away)
Remove membrane, dry rub the ribs (paprika, black pepper etc) and wrap loosely in foil, stick in the oven for a couple of hours. Remove from foil and place on a foil covered tray, brush on BBQ sauce and sprinkle with brown sugar, then put back in the oven on a fairly high heat until they start to go crispy and the sugar caramelises.

2) Quick mode (fast, one pressure cooker pot to wash)
Remove membrane, dry rub the ribs (paprika, black pepper etc) and place in Instant Pot pressure cooker, add 1/2 a cup of water, and set for 30 mins. Once done, place on a foil covered tray, brush on BBQ sauce and sprinkle with brown sugar, then put in the oven on a fairly high heat until they start to go crispy and the sugar caramelises.

3) Amazing mode (BBQ to clean, but the best smoky ribs ever)
Remove membrane, dry rub the ribs (paprika, black pepper etc) and leave overnight. Fire up the Weber and use indirect heat (minion method) and a rib rack. Keep a constant low temperature so the ribs don't overcook. Make up a foil pack containing soaked woodchips, punch holes in it, and place on the coals, replace every so often. You will be smoking the ribs for 4-6 hours. Have a water tray under the ribs also. Periodically brush the ribs with BBQ sauce. Mix some brown sugar with it, to caramelise as the ribs slowly cook.

I have never had ribs, ever. For some reason they have never appealed and also they were never anything that was served up when I was growing up.

I may have to rectify this oversight. smile

Rib of beef with crispy potato slices. No veg... I thought I had some sweetcorn in the freezer but it seems not. Still, more room on the plate for beef biggrin
