Forester XT.

They really do tick every single box you'd need; properly rapid, reliable, practical for dogs but with enough toys for it to be a very comfortable place to sit.

My business partner has a Passat and although a nice car it just doesn't do anything for me really, sadly the same goes for the Octavia. I run a Passat as a work car and it is very good despite having over 200K on the clock! This may sound irrational but I would feel like I was driving a newer version of my work car. The Octavia I like in VRS form but the wife isn't a fan. I wouldn't go French again after being bitten too many times but the Insignia could be a consideration. I can't stop looking at 5 series' though, they just seem to tick every box.

I found the E60 unbelievably tedious to drive. Plenty of space and comfortable, but a real bus in the twisties, I genuinely don't understand what I'm missing.

IMO the Mondeo is streets ahead in terms of the fun factor. I run an Octavia VRS as a daily and it's great for the money in terms of practicality but it's not great fun, as you would expect for a modern VAG really.

It might not be important to you, but while it's my only car on the road currently I miss having something that excites me for the weekend.

Have you driven one? You'll get a much fresher newer model for your budget. In Titanium trim Ford have managed to create a car that feels genuinely upmarket and a car that isn't short of a goody or two as far as spec is concerned. Furthermore, it probably drives every bit as well as the BMs and better than the C Class, SAAB and Audi A4.
