Tiny....wasn't a standard color and wasn't even very popular on the E36 which is the car it was launched on. It's become more popular as time has gone by....I bought an E36 M3 new and was told be the dealer at the time that Dakar was a colour that required a larger deposit because it was very hard to shift Dakar cars.What are my chances of find the perfect spec in this colour?
Chances of finding a car in that spec are absolutely tiny ? Manual wasn't that popular and plenty had sun roof's. If it's a track toy and you're going to modify it I'd buy the right car and paint it.

Like any 'paint' or 'vinyl wrap' specialist out there, there's fantastically reputed places, mid range ones and low budget/entry level places. You basically get what you pay for.
Dakar Yellow was a very rare colour for the E46, to then 'demand' a manual one with a sunroof means there's perhaps a handful in the country. Given that you then wish to use it as a track toy, it makes even less sense to search for such a rare combination.
Get the best normal colour M3 in manual transmission as you can in terms of it's mechanical condition. Forget what options, colour, interior colour and other none required bits it has - alot of it you'll probably remove and sell off anyway.
If it has to be 'yellow' A cheap respray will be peppered within a very short space of time. There's no need really to go with a high end respray or vinyl wrap place. I'd say go for a mid level vinyl wrap - once the front end gets peppered, you just need to replace the vinyl there only saving you considerable amounts of cash.
The choice however, is down to you and how much you wish to 'invest' into the car!

Best color ever! If it will be a track toy just get a carbon fiber roof like I did on mine. Geoff Steel racing sells it for about 500 GBP, installation is pretty straight forward and not difficult. You need a guy to remove and put back on the windscreen and the rear window. You need to drill out the spot welds (the roof panel is a non-structural element) and then using windscreen silicone to bond the CF roof. I put black alcantara on mine and looks and feels really nice.

That looks pretty major to me. Drilling, cutting and grinding to remove roof? How do you protect paintwork and all interior bits?some pics here
