Hi all,

Haven't been cooking for myself for months, just getting back into the routine!

Got a rack of ribs tonight, and some veg, but want something quick and easy to do with white potatoes to go with them.

Have got garlic, onions, and plenty of spices - paprika, chilli, cumin seeds etc. and some herbs - italian mix, basil, rosemary etc.

Can't be arsed with hasselback potatoes, and had mash last night.

Slice into wedges toss with a tablespoon of oil, salt and ground pepper an put in the oven 180 C for 20 mins or until cooked and crispy.

Wedges it was, although, with smoked paprika and cumin. I was hoping to be more adventurous though. Thanks smile

Par-boil, slice and sautee; can do them in batches in a pan then leave them on a tray in the bottom of the oven to stay warm while you finish the rest.

Adventurous and quick and easy don't go together really. I know it's too late, but a couple of recent things that have gone down well:

Parboil and sauté with red onions, added some homemade chilli sauce at the end. Have added sweet peppers too.
Mash with garlic and flat-leaf parsley, we had loads of parsley this year, put it in the blender and then froze in ice-cube trays.

Not the spuds as such but serving hot potatoes of any kind on a bed of raw spinach or finely chopped chard causes the greens to wilt and is a quick way without having to cook them separately and without being a salad.
