John Le Mesurier (aka Sgt Wilson Dads Army) and a great British jobbing actor.
Said he tried to play one character throughout his career and he preferred it if they also wore the same suit.
Same era: Arthur Lowe. They all say that that bumbling pompous acting WAS Arthur.

A few names mentioned have/had good range but are famous for one role, James Gandolfini is a good example.

Except the time he played Norman Bates, which is still one of the most unfathomable casting decisions of recent times

Only actors i can think of that don't fall into this category are:

Denzel Washington
Tom Hanks
Leonardo Caprio

There's probably more but i can't think of any right now.

Patrick Warburton. Every role I've seen him in he's basically David Puddy.

This could well be a new subject - "Actors That .. "

I would definitely agree with Leonardo DiCaprio. There is a tendency to dismiss him as just a 'pretty boy' but he has played some very good and varied parts and I think he will in time go down as one of the greats.

Others for this list (possibly)

Kevin Spacey
Johnny Depp
Heath Ledger (short career but very versatile)
Alec Guiness (possibly one of if not the greatest)

Tom Cruise did spring to mind but then Rock of Ages, Tropic Thunder and Collateral sprang to mind as departures from the norm.

I'll nominate ste LaBouef

Tommy Lee Jones - I like his films but he's the same character in every one.

Sean Connery

Not only does he generally play the same character but he doesn't even try to change his accent.

Highlander - Spaniard with Scottish accent
Red October - Russian with Scottish accent
First Knight - English King with Scottish accent
