What's the going rate for a mint restored S3 turbo?

Depends on quite a few things.

Assuming that it is not an Essex/Dry sump/HC (probably worth more)and that it doesn't have an aftermarket sunroof or other non standard 'improvements'

And the restoration was done to a very high standard by somebody who knows what they're doing then possibly £15-£18k. In reality there are some mint unrestored S3 turbos out there that I suspect people would prefer to one that has been restored.

Hope this helps

I agree.

But I would look out for a mint, original, unrestored low miler.

They don't turn up very often, but they are definitely out there.

I also wouldn't discount a normally aspirated S3. They are a fair bit cheaper, are prettier and there is less to go wrong.

White ones tend to sell better, for some unfathomable reason.
