Afternoon,

Off to Dubai for a week's business trip with Mrs. Shark joining me for 4 days of it.

Can anyone recommend a hotel that will be a good base for both us (she will want some pool time, gym etc) with a bit of luxury but not enough to worry my accounts department?

the radisson royal would suit. walking distance to the WTC and a thoroughly decent hotel for circa $200 a night.

cheaper and with a better pool area would be the towers rotana. another good choice would be the four points sheraton.

i'd definitely stick to the beach side of sheikh zayed road. there's a strip of hotels between the two metro stations [which can both be used to walk across to WTC] and evening traffic is much reduced on the southern carriageway. i imagine more often that not you'll be going south for dinner/evening trips out [marina, madinat jumeirah etc.].

for dinner, please do try the thai kitchen at the creek hyatt. one of the best in dubai imho and you can then stroll along the creek to the golf club bar [the one on the back of the 20dirham note] for after dinner drinks with ambience in spades.

apologies OP but when i read this before i thought i read you wanted to be near the WTC.

where do you need to be for work? rush hour's a joke so this will dictate choice of location. taxis are cheap for excursions but traffic jams can be terrible.
