Any recommendations for new tyres 165 x 14 for a 1968 on wire wheels.
What are the new Pirelli Cinturatos like?

I have falken sincera sn-807s on mine (same wheels & size), Can't fault them and they don't look too modern either.

I fitted a new set of OEM spec Cinturatos (from Longstone Tyres - good service) last year which are mounted on 1968 GT wire wheels.

Whilst they are not the cheapest option they look right, and the ride quality, low noise levels and grip levels are excellent for normal road use. The tyres replaced 25 year, part worn Bridgestones which had covered 12k miles so any comparative comments would be entirely unfair. Michelin XAS are another correct sized period / new stock option.

I also fitted new inner tubes and rim tape at the same time, check if the tyre fitter has the correct balancing equipment for wire wheels and the clip-on balance weights rather than the modern stick on pads. The unused Bridgestone on the spare wheel was retained.

In the picture below the retained "new" Bridgestone is on the right and the Pirellis to the left.
