First project car

I'm new to this forum so I'm not sure where this topic should be best placed. It was originally posted on the general gassing section but got no replies due to it flying to the fifth page. I'm looking at doing my first project car, I've done a bike cafe racer project before and am in the welding, fabrication and machining trade so I'd like to think I'm fairly handy.
So basically I'm looking at getting a running car with an initial price of around £500. I love the look of the mgb gt and the triumph gt6 but they are a little out of my price range from what I've seen. I also like the look of the BMW e30. But because I'm fairly new to the car scene I need a little guidance.

It's a really predictable answer, especially for PH, but how about an MX5?
Plenty around in your price range, from what I hear, straightforward to work on. If you're feeling a little more adventurous, you could try an MGF or TF.
Other than that, try whatever takes your fancy within your budget.
