Pretty sure the Tuscan already has an oil cooler.

Oil cooler is mounted LH side of oil tank low down, see pic it is below rusty bracket. Water inlet is at outlet of Rad. Fitting extra cooler may add oil flow resistance .
If water temp runs around 80-90oC & fans run ok then would expect oil temp to stay stable. My problem in UK is low oil temp when mobile.

I have the same issue - display readings drop to 60 degrees at cruising speeds. I'm pretty sure these are false readings though. The temp senders are right in air flow line at the front of the engine bay.
Once Samy is done I've got a pile of jobs to do on Tamy. One of them is to insulate / isolate the temp senders to see if the above theory is right.

Mallorca 98oC seems very high, has that always been the case? I think bit you are looking at is the oil cooler it is a "tube in shell" fitted next to the nearside chassis hung on rubberAVs. Does the water temp get very high, remember the ECU water temp sensor read with software tends to be different to the dash read temp sensor. Maybe the oil temp sensor is defective, does it read a similar value to water temp when car is left standing overnight?
