at least from my experience outside the UK but I cannot imagine it is any different. I have worked in some places where written and signed copies for overtime have magically disappeared just before they are due to be paid out, which is normally when you leave. It's not a few quid here and there but thousands. The huge problem is customers would not like to pay even more to eat out which would allow for a better wage. I have yet to work for or with anyone who keeps to the contract that doesn't work in a large kitchen (canteen/catering etc). Perversely, the basic pay and holidays are better and a lot of chefs end up in such a place but there are no perks such as tips.
