Do you need anything more than a 320d?

Not watched the video yet but no, I don't think you do. The modern 320d and its rivals are so very capable that it does make it hard to justify anything more. Once the lease is up on my dreary Nissan Qashqai family wagon, I'm going to switch it for a new Jaguar XE or XF, but I doubt it'll be one with anything other than the 2.0-litre diesel lump.
Probably not in terms of the engine and general performance, especially if you drive on the motorway a lot, though I vaguely remember reading an autocar review that suggested the luggage space is not - as they say - "class-leading".
(You could probably say this about many cars though... cars these days are decent enough, generally, that "you don't actually directly absolutely 100% need any more than this car gives you" is not a very high bar. In fact I would say that in pretty much all respects the 320d comfortably exceeds that, and by quite some margin, unless you are some obvious outlier, e.g., you have 9 children, you are 8ft tall, etc.)

Why would anyone want a rattling 4 cylinder diesel? (I've got a 320d - it's ok as a workhorse)
Bmw make very good 6 cylinder diesels , my 325d/330d E91's were so much nicer than the 320d's I've had.
But the 6 cylinder petrol BMW engine is a masterpiece compared to the noisy rattling diesel versions ( got one of them as well in 335i form and my 320d is a horrible tractor in comparison to the 335i).

Most people see cars as white goods and therefore the answer would be no. It's not going to be "fun" driving a 520d by any stretch of the imagination therefore perfect for most of the driving population. However for petrolheads it would have to be a solid yes. I'd even go as far to say that I agree with the below for ordinary folk

When I had a cheap and cheerful base model Clio, I also had a 125cc two stroke kart to play with....
Completely agree with him to he honest. I drive a leased Seat Ibiza FR TDI for a daily mile muncher and spend the money saved on a Clio 172 track car which is a decent spec and I get out on track fairly often with.
I'd rather do that than have a Golf R to sit in traffic and on the motorway in 50mph zones etc.
As I get more money I am more likely to upgrade the toy than buy an expensive daily.
