Apart to start a self build...contract advice needed...

After 2 years of planning "fun" we now have the land, the planning permission, the mortgage offer and a builder...bloody hell we're actually going to do it!
The builder will be prime contractor and will PM the whole lot...we'd love to do a true "self build" but the day jobs get in the way. The builder seems happy to just work off a "sign the bottom of the quote" basis, however we'd like a little more protection and formality I guess in case it all starts going wrong.
Is there a make your own contract pack available? I've heard about JCT contracts but want to know if there's anything more suitable.
