I am replacing the discs on my Griff 500 only the rear ones look a little tricky.
The hub carrier seems to be bolted on using an 8 mm allen key bolt. No problems have got these but the top one seems to be inaccesible to a socket drive.

Any tips anyone...?

I noticed this too - fortunately I did not need to take the disc off at that time. Probably requires sawing the end of an allen key to make it short enough to fit. I did try (on another car) using the allen key adaptor from an impact driver, and a ring spanner to turn it, but just wrecked the spanner!
The Ford bolts which secure the caliper carrier to the hub are not allen headed, they are a normal hex nut (I know cos my brother bought some for the rear brakes on his IRS Dax Rush). If the TVR ones were the same, you would not have the problem! Therefore, I intend to replace mine with the Ford ones if I have to remove them.
