The types of knives you use are a personal choice. Mine is an oddballl collection of old and not so old knives, almost all of them have high carbon blades so they look a bit scruffy but sharpen up nicely. What they all do have in common is that I'm familiar with them and really enjoy using them. Whether it's the weight or the balance or the shape of the blade, I have these knives because they make cutting a pleasure... not because they all look very smart in a block.I do have a couple of eastern knives, one that I bought in a chinese supermarket for nowt, it looks like a japanese kodeba I think, the steel is wonderful. It looks like this (lot scruffier) and is my main weapon of choice. The back end of the blade, that very sharp right angle is excellent for removing the stone from half an avocado without stabbing yourself.

I have no connection with this company but looked it up after hearing a programme on the radio about the guy who owns it, how he went to Japan and started to learn how to make blades in the traditional way. He was there for seven years but came across smiths in their sixties who were still serving under a master. . Realising he'd let himself in for a bit more than he'd bargained for, he returned home and started the Japanese Knife company. Have a browse, it's a fascinating place.

The Damascus blades look wild but too rich for my blood. I do like the traditional knife range.
As for traditional western knives I have a Sabatier filleting knife with a flexible blade that's also a great favourite.

And there's probably still a couple of hundred quid profit in there. I also have a couple of knives from the Japanese knife company, they're great, though I do find they blunt fairly quickly. A quick sharpen and they're great though.
If you're looking for global check Costco, I saw they have a big multi knife block at the moment, but don't remember the price.
Think I'll get something else from the Japanese knife company though. Their shop is great fun, lots of chopping tomatoes etc...

Right, cancelled my other order and gone for this one! Thanks for the heads up...hopefully someone else doesn't come along with a better deal or I'm going to have to cancel again! For the ultimate in knives: Shigeharu. They've been in business since the 12th century. They don't have a website or even a brochure. They don't advertise. To get one of their knives you have to pitch up to their tiny shop on Horikawa street in Kyoto, place your order and wait a couple of days for them to make it. The guy who creates it puts his mark on it plus your family name in calligraphy. It's pure old school. Here's a pic of their Kyoto shop window.

Well, that Minosharp is a great bit of kit! Brought all but the worst of our 7 existing knives up to razor sharpness, I'm sure the last one will sharpen with a few more goes.
Expensive but from 1st impressions, very much worth it. Don't remember my very similar Anolon sharpener being this good.
Anybody want to buy an Anolon steel, or an AnySharp or...!

I'm mulling over getting a set of global knives which are 64% off right now (yeh, right!) And reading a lot of review. Nice to come across this shop who had hardly anything suitable for sale when I went
I ended up buying a veg knife in carbon steel. What a beautiful thing but I do need some extra knife choices on my magnet
