Our kitchin extenstion will be 6mtrs x 4 mtrs
The flat section will be 6mtrs long and about 1.5-2mtrs wide(i think)

I have looked at roof/flat windows skylight type things.

Internally we will have a vaulted celing

Would we be better off having one window around 3x1 mtrs or a couple of around 1.5 x 2mtrs

I'd get the most amount of glass I could - whether through one roof light or two.

I have a 4m x 2m in a side return extension (where the room size if 6m x 5m) and I love it. It's the best bit of the extension. Loads of light.

You'd be better off completely re-designing the roof: either all falt with a large lantern or all pitched (presumabley this would be too shallow for tiles so look at coated steel, zinc, etc.)

I was once told that optimally (to avoid glare) the distance between roof lights should be 1 to 1.5 times to room height. Given the amount of glazing relative the floor and wall areas are set by building regs you need to work out whether two is optimal or one large is preferred.
