Skoda oil change query

I own a 2019 Skoda Scala 1.0 and the service book recommends either VW 504 or VW 508, which I understand is either 5W-30 or 0W-20. I've always self serviced my cars, but last year I took it to Skoda for it's first service as it needed a software update, and due to its age I thought it would be best to have a main dealer service history if I decided to sell. Skoda now want circa £260 for what is basically an oil service so I've decided to self service from now on as I intend to keep the car long term. When Skoda carried out the service last year they used 0W-30, so any idea what grade I should be using? I'm tempted to stick with the service book and use 5W-30, or am I overthinking this?
