You probably want to find out whether the JDC (Jaguar Drivers Club) or JEC (Enthusiasts) is the more active in your area and join. There are probably a few people there with E-Types some of whom are likely to be pretty knowledgeable.
There is also an E-Type club, http://www.e-typeclub.com/ which is a sister organisation to the XK club, this is much smaller and is less likely to have local meetings, but they might be able to put you in touch with other owners in your area.
You could also try http://www.jag-lovers.org where there is an active E-Type forum. I've found the XK forum there invaluable and the couple of times I've had cause to stray into the E-Type forum they've been equally helpful.
Good luck getting it all put back together. At least with an E your luckier than with my XK, there is a Haynes manual for the E-Type. You might also want to obtain the Jaguar Service manual and the parts lists. Often the parts lists are more helpful than the service manuals.
Cheers
