...someone talk me out of a 3000M. After seeing a yellow one at LM (camping in MB), I'm rather taken with them and would love to get one.
How much should I look to spend to secure a decent one?
Are there any major problems I should be aware of?
Can that engine be tuned to gain more Bhp and what do I need to do to the suspension? I realise that the engine is quite heavy and not very advanced so what can be done with it?

Very affordable, practically being given away at the moment.
Easy to work on.
More power & handling available, reasonably cheap, although when in tip top condition they are very good anyway in standard trim.
I would say any you buy will require some work doing (they are old cars afterall).
Great to drive and suprisingly comfortable.
These cars are very underated.
If you buy one now you can't possibly loose money! (I used that line to convince myself when buying mine yonks ago, in hindsight I could have chartered Concorde cheaper).

How much power, depends, like everything on budget, but 230 - 250BHP is achievable, and still road usable.
There also still appears to be a lot of engine tuners out there to do the work or supply the parts, should you wish to do it yourself.
I'll say what I always say when it comes to improving the Essex, throw the TVR exhaust manifolds in a bin and get some decent Tony Law manifolds.
Handling, they all (M's that is) feel different to me, modern car handling's dull as dishwater just sharpen the M up and you'll have fun and M's are not that shabby at going around a track.

Sorry, weak bits are timing gear, change to all steel, after grinding get the crank toughrided or nitrided, or whatever there called.

GAjon's defintely right about the exhaust, 180-210bhp is easily (and reasonably cheaply) available though you need to sort out the air filter breathing as well, above this figure you are really looking at throwing more fuel in (Holley, injection or the triple Weber set up). I would recommen sorting the handling out before going to this latter engine mod stage. When you want even more power visit GAjon and get him to introduce you to Ric Wood.
To sort the handling out, I would recommend firstly choosing some bigger wheels (you'll need these to fit the bigger brakes and to fit more modern rubber), then a trip to Mr Venn (with your chequebook), get him to put his latest trick suspension on and get the car cornerweighted.
Then you'll be ready to rock and roll.
Even with a mere 200bhp a well set up M will be an entertaining piece of kit.
