I have returned from Greece with a Kilo or so of fresh olives from the villa I stayed at. They are the large ones and are half ripe, problem is Im not sure how to prepare them. One of the locals told me how to do it his way but I couldn't really understand what he was saying, and the internet searches talk about using caustic soda (bugger that) any body no what I need to do to remove the bitterness and how to cure them?

just to warn you it takes ages, loads of soaking - first in salty water then just water to turn them into something you would even think about eating. For 1kg it is a lot of work for only a few olives. There is no short-cut, sorry. Oh, and if you try them uncured you will end up being sick.
