I am currently going the the process of getting my green card and am having trouble finding anyone that will insure me without my SS number or US driving license number (which I need a SS number to get).

Can anyone help? It's for a motorcycle....

Which state are you in? Some don't require insurance for bikes.
Alternatively you can go to all of the insurance companies that people on this forum claim to insure un (US) licensed foreigners - tip - there aren't any.
What immigration documentation do you hold? Again , DMV's in some states will accept AOS documents for a temp (1 year) drivers license. Other than that, get a USC to title /insure it and add you with your UK license.

If you haven't gotten your SS# Yet you should be able to get a license, without a green card it's going to have an expiration date that's the same as the expiration date of your visa or work permit.

Pretty much all states do this, New York and New Jersey do.

Insurance? Try calling GEICO, don't use their website, give em a call. Failing that, your best bet in your situation is to contact a local agent, ideally an independent who carries more than just one company. Depending where you are I am sure that there's agents familiar with this.
