2 stroke quad bike engine cutting out.
Discussion
Always start with the plug on a 2 stroke, preferably a new item.
When changing the plug pause for a tea break once the old item is removed, giving the probably flooded engine chance to vent.
Edit. whilst you have the plug out, check for a reasonable spark by holding the plug cap with new plug inserted against the motor and cranking for a few seconds. Likewise test the compression with your thumb over the plug hole , shouldn't expect too much pressure from a 50cc , but expect little farty noises.

check the mixture is correct, check there is no air leaks faulty gaskets, two strokes are prone to have piston and bore wear flooding can also cause the conrod connecting the piston to bend slightly which causes running faults, if the engine is new try starting it with the spark plug slackened off so its not under to much pressure then thighten when running or after its run for a few seconds then it should go on the first pull/crank.
