Done this over the weekend. Its a tasty one pot dish which is cheap and very easy.

Tesco sell a pack of 3 chicken drum sticks and 3 chicken thighs for £2.00 special offer.

Place them in them in a pan skin side up. Smash up 5 garlic cloves (no need to peel) and place in and around chicken. Spinkle with Tyme. Drizzle with olive oil and honey and season. Place in the oven at 150c for approx 2 hrs for the last 20mins turn the oven up to 190c to crispen skin.

The skin is crisp and the meat falls of the bone.

Serve with salad and some boiled baby new potatos.

Total cost for a family of 4 £4.00

This is what I love about PH. Straightforward, no messing, info. I'll give this a try at weekend.

Bet it would be good with lemon and rosemary instead of the thyme...

Might have to give it a whirl next time I have some chicken

I do something similar: put the seasoned chicken in a roasting tray with the garlic, pour over a load of olive oil and then squeeze the juice of a lemon over and put the lemon shell in the pan. Chuck it in a 200deg oven for 30 minutes before taking it out and tucking some basil leaves in among the chicken and returning it to the oven for 10 minutes.

To serve remove the chicken and put the tin over a hot flame, pour in a good glass of dry white and reduce for a few minuteslick It's really good using the juices as a dressing for some crisp lettuce.

I just tried this with thighs only, it came out looking like this.



And it was just sooooo good, thanks loads for sharing this little gem, utter culinary genius.

Good luck, though I'm sure you won't need it, it really is easy.

FWIW I used one squeeze of clear honey per piece and will use two next time. I used large garlic and didn't crush it so it wasn't very garlicy I will next time, and I just bunged a load of thyme sprigs over the lot rather then sprinkling over and that was a bit rubbish too but it all came together OK.

Perfect. I'm realy glad you enjoyed it.

Its goes to show that keeping it simple is the way forward.

Mostly agree. As long as something sounds good the fewer ingredients it has the more likely I am to make it hehe

I also find when something contains a lot of different things it's easier to bugger up the flavour...too many variables

Doing this tonight but I've used skinned and boned thighs and stuffed them with garlic and thyme. We'll see!
