Generally speaking with front disks/pads on VW's, you'll need a 17mm socket to remove the wheel, a 6mm (from memory, I could be wrong) allen key to remove the caliper from the hub & then a large lever to gently press the piston back into the caliper.
I've done Mk1 Golfs, Mk3 Polos & a Mk4 Golf (well, a Seat Toledo - same car)
If you need a proper guide, do a quick google.
Just be careful when pushing the piston back in that a) you push it in straight and b) keep checking your brake fluid level, as pushing the piston in, brings the level back up. The last thing you want is brake fluid all over your engine bay/bulk head !

Wrap an old cloth or towel around the brake fluid reservoir...I've done Mk1 Golfs, Mk3 Polos & a Mk4 Golf (well, a Seat Toledo - same car)
